My name is Kesha Stickland, Co-Founder and CEO of The Mushroom Meat Co. I was injured in a car accident several years ago that left me in constant pain and struggling to heal. I was eventually diagnosed with an autoimmune condition, but later discovered that I could heal my body by changing my diet. I stayed the course and, along with my husband Dan, adopted a gluten and soy-free, plant-based diet. We each lost more than 30 lbs and for the first time in years I was without pain.
Today, my health is transformed and my autoimmune symptoms are gone, but It wasn’t easy. In the early days we still craved meaty dishes, but found that familiar flavors and textures made the diet transition a whole lot easier. As the family’s resident plant-based chef, I began experimenting with new ways to use mushrooms to replace meat in the our favorite dishes.
This led to a discovery: Mushrooms can be as satiating as meat. And a question... .'is it possible to use a natural process to make mushrooms even meatier?' If so, these nutritional powerhouses might make the perfect whole-food meat alternative. The answer turned out to be, YES!
